- Create and execute innovative and high-quality menus for all dining venues on board the cruise ship.
- Manage and oversee the daily operations of the galley, including food preparation, cooking, and plating.
- Train and mentor junior chefs and kitchen staff, ensuring consistency and quality in all dishes.
- Collaborate with the Executive Chef to develop new dishes and menus that meet the needs and preferences of guests.
- Monitor and maintain inventory levels of food and supplies, ensuring efficient use and minimizing waste.
- Adhere to all food safety and sanitation standards, ensuring a clean and safe working environment.
- Work closely with other departments, such as food and beverage and purchasing, to ensure smooth and efficient operations.
- Continuously strive to improve and enhance the culinary offerings on board, keeping up with industry trends and guest feedback.
- Assist in the planning and execution of special events and themed dinners on board.
- Maintain a positive and professional attitude, leading by example and promoting teamwork among kitchen staff.
- Ensure compliance with company policies and procedures, as well as all local and international food regulations.
- Communicate effectively with guests, providing excellent customer service and responding to any special requests or dietary restrictions.
- Participate in regular training and development programs to enhance culinary skills and knowledge.
- Adhere to budgetary guidelines and control costs while maintaining high-quality standards.
- Perform any other duties as assigned by the Executive Chef or other senior management.
Culinary Experience: A Minimum Of 5 Years Of Culinary Experience, Including At Least 2 Years In A Supervisory Role, Preferably In A High-Volume Restaurant Or Hotel Kitchen.
Knowledge Of International Cuisine: Experience In Preparing And Executing Various International Cuisines, Including Mediterranean, Asian, And Caribbean, To Cater To The Diverse Tastes Of Guests On A Cruise Ship.
Menu Planning And Cost Management: Proven Ability To Create And Implement Menus That Balance Guest Preferences And Dietary Restrictions While Also Adhering To Budget Guidelines And Cost Control Measures.
Leadership And Team Management: Strong Leadership Skills And The Ability To Effectively Manage And Motivate A Team Of Culinary Professionals, Including Chefs, Cooks, And Kitchen Staff.
Food Safety And Sanitation: Comprehensive Knowledge Of Food Safety And Sanitation Regulations, Including Haccp Guidelines, And Experience In Maintaining A High Standard Of Hygiene And Cleanliness In A Fast-Paced Kitchen Environment.
