- Create and execute the pastry menu for all onboard dining venues, ensuring a diverse and high-quality selection of desserts and pastries.
- Train and supervise a team of pastry cooks, ensuring high standards of quality and presentation are met.
- Prepare and present all desserts and pastries according to Royal Caribbean's standards and recipes.
- Maintain proper inventory levels of pastry ingredients and supplies, and ensure all orders are placed in a timely manner.
- Collaborate with other culinary team members to develop new and innovative dessert and pastry offerings.
- Ensure compliance with all safety, sanitation, and food handling procedures.
- Monitor and maintain the cleanliness and organization of the pastry kitchen and all equipment.
- Participate in menu planning and cost control initiatives to maximize profitability.
- Stay up-to-date with industry trends and techniques, and incorporate them into menu offerings.
- Provide exceptional guest service by interacting with guests and addressing any questions or concerns related to the pastry menu.
- Assist with special events and functions, including creating custom desserts and pastries as needed.
